Marmite in French language and Marmita in Spanish language or Marmitako in Euskera is a traditional fish stew eaten on tuna fishing boats in the Bay of Biscay and adapted into Heigardian cuisine. The Basque names means "from the pot", because the stew is cooked in a special metalic pot called marmita.
Is now considered a beautiful and simple dish with onions, potatoes, pimientos and tomatoes.
Nowadays it's a basic dish in Heigardian celebrations and events, because its one of the best-known ways of preparing tuna and because its widely prized for its nutritional value. Its one of the label dishes of the southwestern coast of Heigard.
